One of these regions is Kakheti and the delightful Alazani Valley, where grapes grow everywhere, and juicy bunches, thanks to skilled craftsmen, turn into marvelous fine wine.<\/p>\n\n\n

A bit of history<\/i><\/b><\/h2>\n\n\n

If we talk about winemaking in Georgia, then one of the technologies – the production of wine in Qvevri – is included in the famous UNESCO list in the section of intangible cultural heritage. Qvevri are huge clay vessels, up to 8 thousand liters in volume, which are specially buried in the ground and filled with grapes. In these very jugs, the fermentation process takes place. When fermentation ends, the vessel is sealed, leaving it in this state for several months. It is opened, as a rule, in the spring and the hospitable hosts treat guests to an excellent drink.<\/p>\n\n\n\n

This method has been used for centuries. Clay containers found in Georgia and resembling qvevri, researchers date back to the 6th-5th century BC. Currently, the cultivation of wine at home is widespread almost on a par with the industrial one.<\/p>\n\n\n

Zoning<\/i><\/b><\/h2>\n\n\n

In order not to make a mistake in the choice of wine products (after all, each producer considers his “best”), experts advise focusing on the wine-growing area, as well as on the production technology. There are now only five main zones in Georgia. These are the Black Sea coast, Imereti, Kartli, Racha-Letchkhumi and, of course, Kakheti – a real center of winemaking.<\/strong><\/p>\n\n\n\n

The region, in turn, is divided into 14 separate microzones, each of which is famous for its wonderful wines. In the Alazani Valley<\/strong>, such famous microzones as Tsinandali, Kindzmarauli, Akhasheni, Gurjaani <\/strong>spread their lands. Their names reflect the unique style of a certain wine product. For their production, special grape varieties are used. Most often it is the unique “Saperavi” <\/strong>and the universal “Rkatsiteli”<\/strong>.<\/p>\n\n\n

This name belongs not only to the grape variety, but also to the wine. It has an unusual taste, magical aroma, and amazing color. The presence of prunes, notes of blackcurrant is felt in it, the taste of ripe cherries is revealed last in the chord. There are pomegranate and blackberry motifs.<\/p>\n\n\n\n

What makes it even more attractive is its long-lasting astringency. Just one sip of this magnificent elixir can literally oversaturate the taste buds. The older “Saperavi”<\/strong>, the more expressive and refined its internal composition. “Age” 12-15 years <\/strong>is considered the peak for the maximum disclosure of the best qualities. But young wine also has its undeniable merits. It is easy to drink, leaving an elusive, delicate aroma in the aftertaste.<\/p>\n\n\n\n

Saturated color – from purple to dark purple makes the drink simply inimitable. Moreover, it is unlikely that it will be possible to lighten a natural product by diluting it with water or anything else. Saperavi belongs to the category of dry wines. It has a very small fortress, only 10-12 degrees. Numerous studies have proven that this unique drink has quite powerful healing properties.<\/p>\n\n\n
